In terms of promoting bowel movements and preventing constipation, eating okra regularly is indeed helpful. Every 100 grams of okra contains 1.8 grams of dietary fiber, which is twice the content of Chinese cabbage. Sufficient dietary fiber can not only increase satiety, but also promote gastrointestinal motility and prevent constipation. [1] However, this is not a unique effect of okra. The dietary fiber content of water spinach and rapeseed is similar to that of okra, while the dietary fiber content of broccoli is even higher than that of okra, 1.5 times that of okra, making it more suitable for preventing constipation. Okra's protein content is not high, only 1.8 grams per 100 grams, not as high as broccoli. The main component of this mucus is polysaccharide, which is a macromolecular substance with many glucose linked together. Secondly, although animal experiments have shown that okra water extract can lower the blood sugar level of diabetic mice and okra polysaccharides have an improving effect on glucose and lipid metabolism and kidney damage in diabetic rats, this cannot be directly applied to humans, and okra extract is not equivalent to eating okra directly. There will also be some differences in the storage conditions of different okra. A study analyzed the preservation methods of different varieties of okra. The results showed that if left at room temperature for 2 to 3 days, Yuehai okra would lose water and wilt. If placed in a refrigerator at a temperature below 4.4°C, it would suffer frost damage. However, refrigeration at 5°C can effectively reduce the evaporation of okra water and the decomposition of reducing sugars, inhibit the synthesis of crude fiber, and effectively inhibit the degradation of VC.
