The order is as follows:

(1) Put the tea leaves into the teapot, then pour in boiling water, and then quickly pour out the water to rinse the tea leaves. This step is called washing the tea leaves.

(2) Brewing: Pour boiling water into the teapot again, until it is about 70% full (except for oolong tea, which should overflow from the teapot). When pouring water, tilt the teapot downward and lift it up three times, which is the so-called "three nods of the phoenix" to express the host's welcome to the guests.

(3) Seal the pot: After putting the lid on the pot, pour boiling water over the pot from top to bottom;

(4) Dividing the cups: The host should use tea clips to divide the smelling cups and tasting cups into groups and place them on the tea tray. In this process, the tea in the pot can be poured into the fairness cup, so that the aroma of the tea can be released and every guest present can feel the fragrance of the tea. This process is called "Jade Liquid Returning to the Pot";
