Mooncake trivia | Can you believe it? Fruit mooncakes are actually made of winter melon!

According to GB/T19855-2023 "General Rules for Mooncake Quality" , mooncakes named "Guangzhou Five-nut Mooncakes" are required to use five kinds of nuts as the main raw materials: walnut kernels , almond kernels, olive kernels , melon seed kernels , and sesame kernels , and be made according to the production process of Guangdong region.

In other words, if these five nuts are not used, it cannot be called "Guangzhou-style five-nut mooncake". In this case:

① Those made according to the production process in Guangdong are called "five-nut mooncakes"/"Guangdong-style nut mooncakes";

② Those made according to the production techniques of other regions are called "five-nut mooncakes"/"local styles + five-nut mooncakes" (such as Su-style five-nut mooncakes).

Note: Regardless of the type of five-kernel mooncake, the total amount of kernels added should not be less than 20%~

With so many varieties of five-nut mooncakes, can you tell the difference?

There is only one word difference between fruit mooncakes and fruit-flavored mooncakes , but the amount of fruit/fruit products added is very different.

According to GB/T 19855-2023 "General Rules for Mooncake Quality" , the amount of fruit/fruit products added to "fruit-flavored mooncakes" shall not be less than 10% , while the amount of fruit/fruit products added to "fruit-flavored mooncakes" shall be higher than 25%.

If you want to eat "real" fruit mooncakes, you must pay attention to the amount of fruit/fruit products added!

In order to maintain the taste of fruit/fruit-flavored mooncakes, many manufacturers will add winter melon as fillings , firstly because winter melon is relatively cheap, and secondly because winter melon is top-notch! It is easy to store, has a high fiber content, has a soft texture, is colorless and tasteless, and is easy to shape, making it a well-deserved good helper.

Emm... I have eaten fruit-flavored mooncakes. Is it considered a balanced diet? I have eaten all kinds of fruits and vegetables.

According to the requirements of GB/T19855-2023 "General Rules for Mooncake Quality", mooncakes with a filling content of no less than 60% of lotus seeds can be called "lotus paste mooncakes" .

Excluding oil, sugar, water and food additives, mooncakes with 100% lotus seeds can be "upgraded to the next level" and become "pure lotus seed paste mooncakes."

Don't confuse them anymore!

According to GB 28050-2011 "National Food Safety Standard General Rules for Nutrition Labeling of Pre-packaged Foods" , products claiming to be "sugar-free/contains no sugar" on the packaging should have a sugar content of no more than 0.5g per 100g/100mL .

Therefore, "sugar-free mooncakes" are not completely sugar-free, but the sugar content is no higher than 0.5g/100g .

The taste of such mooncakes will be greatly reduced, so many businesses will use sweeteners such as xylitol and sucralose (also known as sugar substitutes) instead of sucrose to keep the sweetness of the mooncakes.

Sweeteners contain almost no calories and do not participate in human metabolism, but it is still not recommended to consume excessive amounts of sugar-free mooncakes, because the main ingredient of its crust is also flour/starch , which will eventually be metabolized into glucose after entering the body. Eating too much will add burden to the body.
