Whether it is harmful depends on the temperature when frying the food. The Beijing Institute of Food Science once conducted a group of experiments to compare the quality of leftover oil under different conditions.

Group 1: deep-fry French fries over low heat;

Group 2: French fries fried in high heat and high oil temperature;

Group 3: French fries were fried repeatedly at high oil temperature.

Group 1: The acid value and peroxide value change little, and it can be eaten appropriately;

Group 2: Acid value and peroxide value showed a significant increase;

Group 3: The acid value and peroxide value increase significantly, so it is not recommended for use.

Repeatedly heating cooking oil at high temperatures will accelerate the rancidity of the oil, reduce its nutritional value, and even pose a threat to human health.

Therefore, if you don’t have many ingredients to fry at home, it is recommended to fry them at low temperature so that the remaining oil can be used again.

But the prerequisite is to filter out the residue in the oil, otherwise the repeated heating of the residue may produce carcinogens, which is harmful to the body.

Although the oil fried at low temperature can be eaten again, the following ways of eating are more recommended~

Chili Oil

You can put some peppercorns, fennel, etc. in the oil while it is hot, fry it until fragrant, then pour it into a small bowl with chili powder, crushed peanuts and sesame seeds. A bowl of fragrant chili oil will come out. You can then put it in a small bottle or seal it in a container and refrigerate it.

Salad

Cold oil can be used directly to mix cold dishes, which can effectively avoid reheating.

Stuffing, pasta

Use oil to brush on the fillings of steamed buns, dumplings, and pies, or when kneading the dough for flower rolls, sesame cakes, etc. It not only increases the flavor but also eliminates the need for reheating.

In fact, you can just not use the leftover oil for frying or cooking. If you want to use it when cooking, you can also start with fresh oil and then add the leftover oil after the dish is out of the pot, which is also healthier.

But please note that it is best to consume leftover oil within 3 days, because leftover oil is cooked oil. The longer it is left, the easier it is to deteriorate and it will also produce many harmful substances.
